From Paul Fabozzi - SJU prof and Rome expert:

Matricanella (Near the Piazza San Lorenzo in Lucina). If I could eat here everyday I would! Only go if you want to do it right with at least two courses and go early in your stay, as you will want to go back. Also, I say always order the specials! Great wine list…can get quite crowded in the evening but lunch is a joy. Piazza San Lorenzo in Lucina is also a quaint square with a great café that sits in the corner. A nice place to hang out and it has great gelato!
Da Gino (Near the Parliament) One of those old world joints that is still around and still serving great authentic Roman fare. The homemade pasta taste like heaven. Also a great place to people watch-it is the favorite of Roman politicians (it is right near the Italian Parliament).
Settimio Al Arancia (also Near the Piazza San Lorenzo in Lucina). Always solid and mostly inventive. I love this one for the professionalism and class without a steep bill……great wine list…..
One last Restaurant pick:
Ditirambo near Campo de Fiori. Very thoughtful mostly organic fare. Wonderful inventive twists on old Italian favorites. This is another one like Matricanella that I could eat in every day. You can just feel the love these folks have for food. Service is always slow so be patient!
In Trastevere, another authentic trattoria that is a MUST is Da Augusto! There is ALWAYS a line at night….again I prefer lunch…..
My two favorite cafes are Sant’ Eustachio for the best coffee (not as much for hanging out) which is not far from the Pantheon and Café Antico Della Pace. This is my regular hang out both day and night. I love the mix in the crowd and I love the spot, a beautiful small piazza behind Piazza Navona.
Another spot to sit is any of the cafes in Piazza Santa Maria in Trastevere. I like the one that faces the church. Get a front row seat and watch Rome go buy with the ancient church of Santa Maria in Trastevere as the backdrop. If I ever just pick up and leave New York this is one of the places you are likely to find me.
Another gelato spot you MUST try is Giolitti down the street and around a corner from the Pantheon. It’s an institution. When my wife and son visit Rome they have to go there AT LEAST twice a day!
As for walking I would say, map out a triangle from Piazza Del Popolo to Piazza Navona to Piazza Di Spagna and just walk the tiny streets. This area is very safe so don't be afraid to get a bit lost. Also if you have time walk up on the Gianicolo Hill. It offers a great repot from the intensity of the center and the best views of the entire city! The Palatine Hill above the Roman Forum is another beautiful spot of hight ground. This one with majestic Roman Ruins and wonderful breezes!
Also, Trastevere is always a joy to wonder around.

From Henderson Peternell - young chef:

Ristorante D'augusto, in Trastevere. Its open after 8, or 8 30, and is so delicious and simple. they have daily specials and if you're lucky youll eat there on the day they serve Rabbit.
across the Ponte Sisto is Fillette di Bacala, which is a fried salt cod place that is amazing.
Pizzeria Ai Marmi is so cool.
Down the street from Ai Marmi on the Viale Trastevere is a Sunday Flea Market that I think is one of the best i've been to. If you can, find the Porchetta sandwich people down and to the left of the entrance. also really good orange juice across the way.
